You should be fine because even if they sent out the paperwork the day you lost your health insurance coverage, you would still have have over 6 weeks to send in the paperwork (60 days from the day they send it out).
However, you can call you health plan adminstrator and ask them in they have online enrollment, they are required by law to send it 1st class or hand deliver it to you.
